It's been a heavy day of questions for poor MrsFlynn so here's something that will brighten the day.

Heard back from Nindigo. She brought up the point that we may not be able to assign a played or active Sim a job. Which actually makes sense now that I think about it more. lol

 -- She gives this tip:

For played Sims, we use Master Controller + MC Cheats -> Intermediate -> Career -> Choose Job

And then we assign the levels hereafter..

I don't think you can assign a played Sim certain jobs - like tending a festival food stand or a consignment store. But otherwise you explain it correctly. Sometimes, NPCs I assign don't show up for whatever reason. Then I try to replace them. Maybe it helps to reset the job lot as well. Sims seems to have their own will at times though. It's probably better to ask over at NRaas. They should know, right?
